Chocolate Caramel Cashew Bars

These chocolate treats have only as much sugar added as you want in the chocolate chips! All of my family members love these chocolate treats. For those chocolate lovers in your family, this makes a great alternative to the commercial chocolate treats they would tend to grab for and taste even better! These are also great to eat with your vitamin D or other fat soluble supplements you may be taking.
20 oz Chocolate Chips
1 Cup Raw Cashews
1 Cup unsweetened shredded Coconut / flakes
1/4 Cup Maple Syrup
1 Tbsp. Coconut Oil
1 tsp. Pure Vanilla extract
1/2 tsp. Sea Salt
1 Cup Cashew Butter
Get our pans out, Cut the parchment paper to fit along the bottom of each pan. Set up your mixer.
First Pulse your Cashews in your mixer. Then add all your ingredients except salt and cashew butter. Once all the ingredients above are mixed well together add in your salt and cashew butter.
Take your dough and split evenly between your two pans. Evenly press your dough down and place in the refrigerator to chill while you melt your chocolate of choice.
I melt my chocolate by adding a tablespoon of coconut oil to my bowl of chocolate chips. I start with 1 minute, and then 30 second increments, stirring between each until the chocolate is thoroughly melted. Once your chocolate is melted, pull out your two pans from the refrigerator. Split the chocolate evenly amongst the pans, spreading with a spatula. Place your dessert pans into the freezer to set for 40 minutes.
These will keep for quite a long time in the freezer. Pull them out to defrost, about 20 minutes and cut into 2 x 2 squares, or small bars if you prefer. Place them in the fridge for 1-2 weeks to enjoy!
To Make a Nut Free Option, just switch out the Cashews for sunflower seeds, and sunflower butter!
