Cookie Cake Pops
Start by making the Vegan Gluten Free Cookie Cake batter.
Once you have your cookie dough, yes it is a little sticky, add your dough to your doughnut pan and bake in the oven at 350 degrees F for about 10 minutes.
You can immediately flip over your mold pan and let them fully cool on the cookie cooling rack.
After the mini cookie cake doughnuts are fully cooled it is time to start assembly the cake pop!
Set up a sheet of parchment paper for drying, and find your self some cake pop sticks. I chose to add in some color for valentines this year, as you see in the pictures below. You can get creative, coconut flakes,
add one stick to each cookie cake. Then melt your chocolate to your preference. I add my melting chocolate to a microwave safe bowl with 1 tbs of coconut oil. heat for 1 minute in the microwave. Take it out and stir. I place it back in the microwave for 30 second increments stirring after each one until all of the chocolate is melted.
Fully dip the cookie cake pop in the chocolate, and then set aside on the parchment paper to dry. if you would like to add sprinkles to this phase you can while the chocolate is still wet! Another option is to add some melted chocolate to a bag, cut the corner, and drizzle over the dried cake pops to give it some fun flare.
